Farming

From the very beginning, our focus has been on locally grown grains from farmers we know and trust. We owe much to Oregon State University’s Barley World program, which has played a pivotal role in reviving heritage barley strains like Purple Karma and developing new ones such as Full Pint—varieties particularly well-suited for brewing and distilling in the Pacific Northwest.

Tiller Malt has provided farmers with an outlet to highlight their land’s unique terroir, while offering brewers and distillers a locally grown and produced, uniquely flavored craft malt option.

Mecca Grade Estate Malt – Gazelle Rye
All of Mecca Grade’s malt comes from grain grown within a 2-mile radius of their family farm and malthouse in Central Oregon. They've been farming the same land since 1905—this is true estate malt at its finest.

LINC Malt – Baronesse Barley
LINC, the Local Inland Northwest Cooperative, was founded to create sustainable, new markets for agricultural products from the Inland Northwest—supporting local growers and producers right here in our region.

Distilling

Dogwood Distilling was founded with the mission of delivering exceptional quality at a great value. When it opened in Forest Grove in 2010, being located in the deep western suburbs of Portland was somewhat unconventional. However, the distillery’s proximity to Oregon’s renowned wine country made it an ideal location for the next evolution of the business.

In 2021, Jim Anderson, owner and winemaker of Patricia Green Cellars, and Associate Winemaker Matty Russell joined forces with Lynsee Sardell, the distiller behind Dogwood Distilling, to transform smoke-tainted Pinot Noir into something extraordinary—brandy.

By 2022, with the support of Steve and Cheryl Mozinski, they acquired the distillery and rebranded it as Die the Wolf. Patty Green Whiskey is an affiliate of Die the Wolf.

Barrel Aging

Cooperage

Patty Green Whiskey is barrel-aged in repurposed Patricia Green Cellars French oak barrels, which are refurbished by ReWine Barrels, a local company that removes the neutral oak layer from the interior to expose fresh wood. These barrels are then given a new char (#2–4) for whiskey aging.

Additionally, we’ve started incorporating Oregon oak barrels crafted by Oregon Barrel Works. Oregon Barrel Works meticulously sources Oregon white oak from across the Pacific Northwest, offering distillers a unique opportunity to take terroir expression to the next level.

Aging & Bottling

Patty Green Whiskey is aged and bottled on-site at Patricia Green Cellars. The distillates of Barley or Rye are pre-blended with the brandy distillate before entering the barrel, ensuring they age harmoniously together. Whiskeys are bottled when ready—when we believe they taste absolutely delicious.

Whiskey tastings are offered in the barrel brickhouse or at our speakeasy bar tucked behind the barn.

Barley & Rye

Purple Karma Barley

Purple Karma Barley is an ancient Himalayan landrace variety—literally purple. A landrace is a genetically diverse crop adapted to a specific region’s climate, soil, and traditional farming methods. Though often considered unchanging, landraces continuously evolve through natural and artificial selection. Many have disappeared from cultivation but are preserved in gene banks.

The Oregon State Barley Project is reviving Purple Karma Barley, adapting it to modern sustainable agriculture despite the challenges of commercialization. Currently grown only in Oregon, it is known for its dense texture and hearty flavor.

We offer two versions from the same distillation batch. The “Regular Awesomeness” comes from the beginning and end of the “Hearts” section, delivering flavors reminiscent of Highlands Scotch. A smaller selection from the “heart of the Hearts” is an intensely deep and powerful whiskey. Barreled in June 2021, it’s a true showstopper.

Full Pint Barley

As its name suggests, Full Pint Barley is a staple in beer brewing, prized for its warm, bready notes and hints of salted popcorn. When distilled into whiskey, it showcases a rich grain sweetness and an exceptionally smooth character, making it highly enjoyable even in its youthful stage.

Barreled in August 2021, this whiskey has developed a remarkably deep color, a testament to its aging process and the quality of the barley itself. Over time, we anticipate its flavors will continue to evolve, gaining depth and complexity while retaining the inviting sweetness that sets it apart.

We are eagerly preparing for our first bottling of Full Pint whiskey, set for release in December 2024. This expression promises to highlight the unique qualities of this versatile barley, bringing a distinctive malt-forward profile to our collection.

Francin Barley

Francin Barley, originating in the Czech Republic, has been a staple in brewing for decades, particularly in crafting lower-extract beers like Pilsners and Lagers. Its reputation for producing clean, crisp malt profiles makes it an intriguing choice for whiskey distillation, where its subtle yet distinctive character can fully develop over time.

Barreled in October 2021, this whiskey has undergone a meticulous aging process, allowing its flavors to deepen and mature. In the summer of 2024, we proudly released our first expressions of Francin whiskey, offering two distinct versions.

  • Cask Strength (118 Proof): A bold, undiluted expression that delivers an intense and full-bodied experience, showcasing the barley’s purest form.

  • Classic (102 Proof): A refined, balanced take that preserves the whiskey’s complexity while offering a smoother, more approachable profile.

Tiller Malt

Tiller Malt is crafted from a carefully selected mix of barleys, including Full Pint, Purple Karma, and Baronesse. This blend brings together the distinct characteristics of each variety, resulting in a rich and complex flavor profile.

As the first barley we ever distilled, Tiller Malt holds a special place in our journey. It was barreled in May 2021 and aged in a combination of five carefully chosen casks—two Oregon Oak and three repurposed French Oak. The Oregon Oak imparts bold, earthy depth, while the French Oak contributes subtle spice and refined elegance, creating a well-balanced and layered spirit.

After nearly three years of maturation, this exceptional whiskey was bottled under the Multifarious label in early 2024. The result is a distinctive expression of terroir, craftsmanship, and time, celebrating the interplay of tradition and innovation in every sip.

Gazelle Rye

Gazelle Rye is a nearly Straight Rye whiskey, crafted with 90% rye and 10% brandy. The small addition of brandy isn’t meant to dominate but rather to subtly enhance the rye’s natural intensity, acting as a polishing agent that provides a delicate touch of sweetness in the background.

This tall rye variety was originally developed in Western Canada, where it became highly valued in bread baking due to its robust grain structure and rich flavor. When distilled, Gazelle Rye reveals an unexpectedly distinctive character—bold, sharp, and intensely spiced, reminiscent of homemade ginger snaps.

Barreled in December 2021, this whiskey has been patiently aging, allowing its fiery rye spice and subtle brandy influence to fully integrate. The first release is slated for November 2024, offering a laser-sharp, high-intensity rye experience unlike any other. Expect a whiskey that is both powerful and refined, balancing tradition with an innovative twist.


Lightning Barley

Lightning Barley is a 2-row facultative malting barley, meaning it develops with two rows of kernels along the seed head. These kernels are plump, straight, and symmetrical, characteristics that contribute to its exceptional malting properties. Two-row barleys are favored for their lower protein content, higher starch levels, and reduced enzyme activity, making them ideal for brewing and distilling.

What sets Lightning Barley apart is its unusually long fermentation time, significantly extending the whiskey’s production process compared to other barley varieties. This unique trait adds to the depth and complexity of the final spirit.

The first barrels of Lightning Barley Whiskey were filled in April 2022, with additional batches added in May and June. This will likely be the only commercial Lightning Malt Barley Whiskey ever produced, making it an extraordinary and highly collectible expression.

Despite its promising flavor profile of dried apricots and warming spices, the barley’s unpredictable usability window makes future cultivation highly unlikely. For this reason, Lightning Barley Whiskey will be the rarest in our collection, a once-in-a-lifetime creation that may never be replicated.

Baronesse Barley

Baronesse Barley was originally bred by Nordsaat in Germany, where the focus was strictly on high-quality grains rather than feed varieties. However, it failed to gain traction with Europe’s large commercial malt operators at the time. In the late 1980s, Baronesse was introduced to Washington State University (WSU), but with no interest in malting barley at the time, WSU referred it to Western Plant Breeders, where it was marketed strictly as a feed barley.

For over a decade, Baronesse dominated the Pacific Northwest feed market, prized for its plump, heavy kernels and consistency. However, as newer feed varieties emerged, Baronesse gradually disappeared from large-scale cultivation, and its true potential remained largely overlooked. What many failed to recognize was its exceptional flavor, making it a hidden gem in distillation.

Barreled in November 2021, our distiller describes the resulting whiskey as “a walk through a spring meadow”—incredibly floral, delicately herbal, and infused with hints of spiced honey and tea. With its naturally elegant profile, Baronesse Barley Whiskey may see an earlier bottling than other varieties, while still offering a complex, distinct, and satisfyingly unique character.
