Full Pint Barley Whiskey

This went into barrel in August 2021 and was bottled in November 2024. Made up of 80% Full Pint barley and 20% Pinot Noir brandy, the whiskey was aged 40 months in six repurposed French oak wine barrels, all charred to a #2 level.
The flavor profile consists of cinnamon, allspice, nutmeg, sandalwood, dry oak, date, sultana, dried fig, cocoa, and orange rind.

This barley was developed by the Barley World program at Oregon State University to thrive in the cool Northwest climate and can either be overwintered or spring-planted, making it easy for farmers to work with. Although it has only been in existence for about a dozen years, we believe the success Full Pint has enjoyed in the local craft beer scene will translate seamlessly into the world of whiskey.
