Francin Barley Cask Strength Whiskey

Made up of 80% Francin Barley and 20% Pinot Noir brandy, the whiskey was aged 30 months in a repurposed French oak wine barrel that was charred to a #2 level. The former Pinot Noir barrel was renewed by ReWine, a local company that removes the layer of neutral oak from the interior of the barrel to expose new oak. The barrel is re-toasted to wine barrel specifications and then charred to whiskey barrel levels.
It went into the barrel at 118 proof, and after many trials of watering it to lower levels, we were stuck—it was great at both 102 proof and full cask strength.

Francin Barley is a two-row Czech barley that was only recently introduced into the Northwest at the turn of the century and has found growing success between the Gorge and the Wallowa Mountains in the northeast corner of Oregon. This barley has traditionally been used in pilsner and lager-style beers and is prized for its clarity and range of flavors.
